Recipe: Sausage Stuffed Potatoes



1 lb Manda Sausage
8-10 Large Potatoes
1 Onion (diced)
1 Bell Pepper (diced)
½ lb Shredded Cheese
1 cup Green Onions (diced)

Wash potatoes, bake until cooked, and let cool. Dice the sausage into small pieces. Cut the cooled potatoes in half lengthwise and scoop the potato out from its skin. Mix the scooped potatoes with the sausage, onions, bell peppers, and cheese. Salt to taste. Fill the potato skins with the mixture. Bake at 350o for 20 minutes. Top with green onions.
