1 lb Manda Sausage, Manda Tasso, or Manda Ham
1 lb White Beans (washed)
1 Onion (diced)
½ Bell Pepper (diced)
1 Celery Stalk (diced)
1 can Chicken Broth or 2 Chicken Bouillon Cubes
1 tbs. Minced Garlic
3 tbs. Butter
Cut sausage, tasso, or ham into bite sized pieces. In a large pot, melt the butter and cook the onions, bell pepper, celery, and garlic on medium heat for 5 minutes. Add beans, sausage, chicken broth or bouillon cubes, and enough water to cover the beans by 1 inch (about 6 cups of water). Bring to a boil, reduce heat and simmer 3 hours or until beans are tender. If necessary, add more water to the beans while they are simmering. Season to taste.
White Beans are usually served as a side to jambalaya. However, you may also serve as is, over rice, or on top of jambalaya. |
